SUMOLL & XARELLO RED Brut Nature
Fumissola in Penedès is the name given to a low, thin fog reminiscent of smoke that appears on some anticyclone days in winter. This blanc de noirs is made with Sumoll and Xarel·lo Vermell. Two ancestral varieties typical of Penedès but uncommon in sparkling wines.

- Aging in the cellar: Minimum of 30 months in rime
- Disgorged : After 30 months, it is disgorged according to demand. No added sugars and sulphides in the disgorging. No freezing of the bottle neck. The disgorging date is indicated on the back label.

Grape varieties
50% Sumoll and 50% Xarel·lo Vermell Both from the “La Pineda” estate in Vilobà del Penedès. Two vineyards planted in 2012. Limestone clay soil with the presence of chalk.

Viticulture
Organic farming certified by the CCPAE (Catalan Council for Organic Agriculture). We prioritize respect for biodiversity and the environment: that is why we cultivate our vineyards without using herbicides or insecticides and we only use natural organic fertilizers.
Vinification
Grapes harvested by hand to avoid premature oxidation before pressing. Very gentle pressing and subsequent decantation for 24 hours with natural decantation. Controlled fermentation in stainless steel with wild yeast. Aging of the base wine on fine lees for 24 months and natural stabilization during the winter in stainless steel.
Tasting note
Light gray in color, with a persistent rosary of fine bubbles. On the nose, the aging is appreciated by its notes of ripe fruit. On the palate, the texture is very creamy and with good acidity with a combination of citrus fruits such as lime and grapefruit, red fruits such as raspberries, or dried fruits such as apricot and medlar.
