Equilibri

This is a balancing wine. It is only made in specific vintages. Those that have the virtue of providing a grape with sugar and a good level of acidity. It is a unique wine that comes from a very old vineyard of 1 hectare of plant surface on the mountain of Sant Jaume in Pacs del Penedès.

The label is a reproduction of the work “The Tightrope Walk Apprentice”, a painting on canvas by the painter Juan Carlos Civit.

Vinification

Manual harvest in two parts. First harvest: One third of the vineyard on september 4th. Second harvest: Rest of the vineyard on September 29th. 1st Harvest: Soft pressing. Static settling of the flower must at 16ºc during 24 hours. Addition of natural yeast and fermentation in stainless steel vats during 10 days. Racked and reserved in inert stainless steel tank. 2nd Harvest: Cold pellicular maceration at 10 ºC for about 5 hours before pressing. Static settling of must at 16ºc during 20 hours, addition of natural yeast and fermentation in stainless steel vats. Once fermentation is finished racked to 300 litters oak barrels with its own lees. Aged for 24 months in barrel adding the first wine to keep it fresh. Finally both wines are blended. It does not stabilize or clarify. Bottled in June 2017.

Tasting note

Medium intensity aroma, clean, concentrated and complex. Aromas of ripe, candied fruit predominate, with hints of quince and apricot jam that give way to slight citrus notes, pleasant spicy aromas, toasted and smoky notes. In the mouth it has a volume on the palate. It is a full-bodied, unctuous white wine that surprises with its fantastic acidity. Long and very persistent.
